Pappardelle, our bestseller, is made from a flavorful blend of heirloom Frassinetto and Senatore Cappelli wheats. Its wide shape is an ideal match for heartier sauces and ragus, while its robust flavors shine in a simple sauce of olive oil, lemon juice, salt, and pepper.
Frassinetto and Senatore Cappelli are heirloom wheat varieties known for their complex flavor and heightened levels of phytochemicals and other nutrients. We whole mill them, without sifting, so we can enjoy it all.
