Floriani Red Flint, a rare heirloom corn traditionally grown by Italian Alpine farmers, was carefully cultivated for the qualities that make great polenta. Floral and mildly sweet, this luscious polenta pairs beautifully with the rustic flavors of Italian food — earthy dishes of mushrooms, dark greens, and braised and grilled meats.
**Please note, the cooking instructions on the bag are incorrect. We recommend 4 cups of water whisked in with 1 cup of polenta, cooking at a low simmer for 1 hour. Add water as needed and then butter, parmesan, and salt at the end.**
