*Your parbaked bread will most likely arrive thawed. You can get it in the oven right away or into fridge for 1-2 days before bake off (directions are below). We ship orders with bread out on Tuesdays to keep transit time to minimum. Please leave a note if you'd like yours shipped on Friday instead. For Midwest and East Coast customers, we recommend two day shipping.

Our Identity Preserved Hearth Bread is made from a blend of WB9229 (hard red) and Patwin (hard white) whole grain flours. These wheats are both grown by Fritz Durst in Capay, CA. 

This hearth bread is delicious every day bread that you want baked fresh with dinner and toasted for breakfast the next day. It tastes amazing, it's actually 100% whole grain, and is fermented for 12+ hours using natural starter - making this bread good for digestion.

It also keeps well because the special milling of the flour allows the dough to take on and hold more water, which translates to fantastically structured crumb that retains moisture over time.

It goes with anything and everything, and tastes delicious with simple butter and salt.

  • Ingredients: Organic whole wheat flour, organic hard red wheat, water, sesame seeds, whole brown flax seeds, sunflower seeds, sourdough starter (water, wheat flour, whole wheat flour, malted barley flour), sea salt.


Baking instructions:

You can get a really nice, crisp crust if you pat the bread down with water before placing in the oven.

From Thawed - bake at 385° for ~18 minutes. You'll know that its done when the crust is firm and the loaf is well browned.

From Frozen - bake at 450° for 25 minutes. You'll want to test that the center is warm with a baking probe or knife (from the underside of the loaf)

After baking, let the loaf cool on an open-air rack for 20-30 minutes. The loaf keeps well in an airtight bag or container for a few days, or can be sliced and stored frozen.
