In light of Shelter in Place mandates and increased demand for our products, we want to offer a special on our 100% Whole Grain Breads: when you buy three loaves, get discounted 2-day shipping! Shipping will be expedited in a USPS Flat Rate Box for speedy service and is built into the price. We ship orders with bread out on Tuesdays to keep transit time to a minimum.

This is a perfect opportunity to stock up on our wonderful loaves of bread. Bake one loaf off, freeze another, and offer the last to a neighbor or colleague.

Our Identity Preserved Hearth Bread is 100% whole grain and made from a blend of WB9229 (hard red) and Patwin (hard white) whole grain flours. These wheats are grown by Fritz Durst in Capay, CA. 

Our bread is fermented for 12+ hours using a natural levain - making it nutrient-rich and easy on digestion. Our flour is finely milled to increase the hydration of our dough, which translates to a well-structured crumb that stays fresher for longer.

The bread is parbaked, which means that it is partially baked then rapidly frozen so you can bake it at home and enjoy it fresh from the oven. It goes with everything and tastes delicious.

 

Cracked Wheat Bread:

  • 100% Whole Grain & Whole Milled

  • Ingredients: Organic whole wheat flour, organic cracked hard red wheat, water, sourdough starter (water, wheat flour, whole wheat flour, malted barley flour), sea salt.

Seeded Hearth Bread:

  • 100% Whole Grain & Whole Milled
  • Grown & Milled in California
  • Identity Preserved (100% Traceable from seed to table!)
  • Ingredients: Organic whole wheat flour, organic hard red wheat, water, sesame seeds, whole brown flax seeds, sunflower seeds, sourdough starter (water, wheat flour, whole wheat flour, malted barley flour), sea salt.

Storage & Baking instructions:

STORAGE: Your bread was shipped frozen and may arrive thawed. You may refreeze the loaf and bake when you are ready. The preferred method is to bake as soon as it arrives, let it cool, slice it to your liking, place it back in the freezer-safe plastic bag it was shipped in, put it in the freezer, and toast the sliced portions as needed.

BAKING: For a crisp crust, pat-down the bread with water before baking.

Bake from Thawed: Pre-heat your oven to 385°F. Place the bread directly on the rack and bake for 18 minutes. The bread is done when the crust is firm and the loaf is well browned.

Bake from Frozen: Pre-heat your over to 450°F. Place the bread directly on the rack and bake for 25 minutes. Your bread is done when the center of the loaf is warm. Test by inserting a knife or other instrument from the underside of the loaf.

Let the loaf cool on an open-air rack for 30-45 minutes before slicing.

We take sustainability seriously and aim to reduce, reuse, upcycle, and recycle whenever possible. That’s why our loaves are shipped in 100% post-consumer recycled cardboard boxes by the US Postal Service. The bread is padded by shredded, up-cycled menus from Oliveto, our partner restaurant in Oakland, California.
