Edison is a modern soft white wheat variety that originated in the Pacific Northwest bred by a self-taught backyard wheat breeder named Merrill Lewis. It was then improved by Washington State University's Bread Lab as the wheat for Chipotle's soft wheat tortillas. Golden-hued and low in tannins, it gives a delicate, buttery flavor to sourdoughs, pizza doughs, and muffins.
We consider Edison to be THE pastry flour of whole grain flours as it has a lower gluten level and light flavor that works really well in cakes, cookies, and shortbreads.
