Summit is a modern hard red winter wheat introduced in 2011. The phenols from the bran give this wheat a reddish color and rich, robust flavor ideal for quickbreads, pie crusts, and rustic sourdoughs. We use Summit in our pasta, too. Bay Area artisanal bakers love mixing Summit with our Patwin flour as an alternative to all-purpose flour.
