Our award-winning spaghetti is made with Senatore Cappelli, an ancestor to modern durum wheat. Named after Senator Raffaele Cappelli from the Italian region of Abruzzo, he was a promoter in the early twentieth century of agrarian reform which led to the distinction between hard and soft wheats. Use them for this Asian Prawn Noodle Salad or try a Sicilian inspired Pasta alla Norma.
