Summit is a modern hard red winter wheat introduced in 2011. The phenols from the bran give this wheat a reddish color and rich, robust flavor ideal for rustic sourdoughs, quickbreads, and pie crusts, We also use Summit in our pasta. Bay Area artisanal bakers blend our Patwin and Summit flours for flavorful and nutritious 100% whole grain goods. Use whole kernels (also known as wheat "berries") for home milling flour or in soups and salads.

Store in a cool dry place
To prepare kernels:
Sort and rinse before cooking
1 cup kernels, 2 ½ cups water, ½ tsp salt.
Bring water to a boil in a pot. Add kernels and simmer for 1 hour or until tender. Drain and serve as desired.
