Identity Preserved, Organic Summit Hard Red Winter Wheat Kernels: 4lb Bag
Hard Red Winter Wheat | Variety: Identity Preserved Summit
Grown organically by Fritz Durst in Capay, CA
Summit is a modern hard red winter wheat introduced in 2011. The phenols from the bran give this wheat a reddish color and rich, robust flavor ideal for rustic sourdoughs, quickbreads, and pie crusts, We also use Summit in our pasta. Bay Area artisanal bakers blend our Patwin and Summit flours for flavorful and nutritious 100% whole grain goods. Use whole kernels (also known as wheat "berries") for home milling flour or in soups and salads.
Protein: 9.40%. At Community Grains, we are learning that protein percentage does not equal protein functionality. It starts with the quality of the soil.
