Hard Red Wheat | Variety: Identity Preserved Octane

Grown organically by Fritz Durst in Capay, CA

Octane is a hard red wheat introduced in 2019. The phenols from the bran give this wheat a bronze color and rich, robust flavor, making it ideal for rustic sourdoughs, quickbreads, and pie crusts. Bay Area artisanal bakers haved blended our Patwin and Summit flours for years and now we've begun offering Octane to continue that flavorful and nutritious mixture of whole grain goodness. Use these whole kernels (also known as wheat "berries") for home milling flour or in soups and salads. 

Protein: 10.5–12%. At Community Grains, we are learning that protein percentage does not equal protein functionality. It starts with the quality of the soil.

Store in a cool dry place

To prepare kernels:
Sort and rinse before cooking
1 cup kernels, 2 ½ cups water, ½ tsp salt.
Bring water to a boil in a pot. Add kernels and simmer for 1 hour or until tender. Drain and serve as desired.
